After just 5 days of cleaning up this family’s diet, the results are clear. We are calmer, more clear headed, more energetic and sleeping better. And that includes my 2 yr old! It’s incredible to think about how the food we put into our bodies affects all aspects of our lives.
Admittedly, there have been a few moments of contest from my toddler; especially when denied his (daily) request for a PB&J. Fortunately, he has come to really enjoy the PB & apple slices almost as much.
To help us make it through this 4th of July holiday weekend, I’ve outlined a rough meal plan that includes favorites like corn on the cob, caprese salad, fruit salad, and a spicy black bean & chicken salad with a homemade vinaigrette. To kick off the weekend with a healthy start, I whipped up this crustless spinach quiche. (Since I can not leave a recipe alone, I added pancetta to please my husband’s meat cravings & help hide the spinach flavor. Next time I would also decrease the amount of cheese, but it was delicious!) Now we have a protein packed, low carbohydrate breakfast to start our day off on the right foot!
